Spicy Black Bean Soup

Ingredients

olive oil

cup
yellow onion (about 1 large onion)
diced

red bell pepper
diced
1
pound
smoked sausage
cut into 1/2 inch pieces
1
16 oz jar
chipotle salsa

15 oz cans
black beans
2
14 oz cans
fire roasted tomatoes
1
tbsp
oregano
Instructions
Heat olive oil in large sauce pot over medium heat
Add onion, cook until translucent
Add bell pepper, cook for 3 minutes
Add sausage, salsa, beans, tomatoes, and oregano; simmer over medium-low heat for 30 minutes (stir occasionally)
Serve with sour cream and shredded pepper jack cheese
