Bacon and Mushroom Smothered Chicken
What can be better than bacon and mushrooms on chicken smothered with cheese and honey mustard sauce? Kind of a rhetorical question but this chicken recipe is fabulous and easy to make.

Ingredients
Chicken
4
boneless and skinless chicken breasts
salt and pepper to taste

cups
Zesty Italian dressing
2
tsp
cumin
1
pound
applewood smoked bacon
diced
1
8oz
package baby Bella mushrooms
sliced
1
cup
cheddar cheese
grated
1
cup
Monterey Jack cheese
grated
Honey Mustard

mayonnaise
1
tbsp
Dijon mustard

honey
Instructions
Chicken
Flatten the chicken with a meat mallet to about ¼ inch thick
Salt and pepper the chicken and place in a plastic zipper bag
Mix the Italian dressing and cumin in the plastic zipper bag, seal, and marinate for 2-3 hours
Grill the chicken over medium-high heat until it reaches 160℉
While the chicken is grilling, preheat oven to 350℉
Also while the chicken is grilling, fry the bacon in a large skillet until done
Add the mushrooms to the bacon and sauté until tender
Remove the chicken from the grill and place in a glass baking dish
Cover each piece of chicken with the bacon / mushroom mixture, followed by the cheddar and Monterey Jack cheese
Place the chicken in the oven until the oven until the cheese is melted
Serve with honey mustard
Honey Mustard
Mix mayonnaise and mustard in a bowl
Add honey, mix well
