Ingredients
Frittata Base
- 3 large eggs
- 3 tbsp heavy cream
- ½ tsp salt
- ⅙ tsp black pepper
- 1 tbsp butter
- ½ tbsp olive oil
Vegetable Filling Version 1 - Bruschetta Frittata
- 1 tbsp roma tomato diced
- 1 tbsp basil chopped
- 1 tsp red onion diced
- ½ cup mozzarella cheese shredded or balls
- ¼ cup grated parmesan cheese
- ¼ cup cooked pancetta or bacon (diced) optional
Vegetable Filling Version 2 - Pico De Gallo Frittata
- 1 tbsp roma tomato diced
- 1 tbsp cilantro chopped
- 1 tsp red onion diced
- ¾ cup pepper jack cheese shredded
- ¼ cup cooked chorizo optional
Vegetable and Meat Filling Version 3 - Denver Frittata
- 1 tbsp bell pepper red or green
- 1 tbsp yellow onion diced
- ¼ cup smoked ham diced
- ¾ cup cheddar cheese shredded
Instructions
- Preheat the oven to 400 ℉
Frittata Base
- Combine the eggs, heavy cream, salt, and pepper to a small mixing bowl; whisk the mixture until smooth
- Melt the butter in a 16 oz ramekin in the microwave
- Add olive oil to the ramekin
- Swirl the butter around the ramekin to coat the bottom and sides
Frittata Filling
- Add the vegetables and meat (if using) to the bottom of the prepared ramekin; spread them evenly on the bottom
- Pour the egg and cream mixture into the ramekins
- Add the cheese(s) to the ramekin and distribute evenly using a fork; make sure all of the cheese is submerged in the egg
Baking the Frittata
- Place the ramekin on the middle rack of the oven; bake for 15 minutes
- Move the ramekin to the top rack (6 inches from the top) bake for another 5 minutes or until the middle of the frittata has set and is golden brown
- Remove from the oven and let set for 2-3 minutes
