This is a quick and easy soup for one of those busy weekday meals.

Ingredients

  • 1 tbsp olive oil
  • 1 cup yellow onion (about 1 large onion) diced
  • 1 red bell pepper diced
  • 1 pound smoked sausage cut into 1/2 inch pieces
  • 1 16 oz jar chipotle salsa
  • 2 15 oz cans black beans
  • 2 14 oz cans fire roasted tomatoes
  • 1 tbsp oregano

Instructions

  • Heat olive oil in large sauce pot over medium heat
  • Add onion, cook until translucent
  • Add bell pepper, cook for 3 minutes
  • Add sausage, salsa, beans, tomatoes, and oregano; simmer over medium-low heat for 30 minutes (stir occasionally)
  • Serve with sour cream and shredded pepper jack cheese
