Spicy Black Bean Soup
This is a quick and easy soup for one of those busy weekday meals.

Ingredients
- 1 tbsp olive oil
- 1 cup yellow onion (about 1 large onion) diced
- 1 red bell pepper diced
- 1 pound smoked sausage cut into 1/2 inch pieces
- 1 16 oz jar chipotle salsa
- 2 15 oz cans black beans
- 2 14 oz cans fire roasted tomatoes
- 1 tbsp oregano
Instructions
- Heat olive oil in large sauce pot over medium heat
- Add onion, cook until translucent
- Add bell pepper, cook for 3 minutes
- Add sausage, salsa, beans, tomatoes, and oregano; simmer over medium-low heat for 30 minutes (stir occasionally)
- Serve with sour cream and shredded pepper jack cheese
